Crispy Chilli Chicken Noodles This is what I make when I’m craving a Chinese takeaway but don’t want to feel grim after 🤣💞  Crispy chicken in a sticky sweet and spicy chilli glaze over stir fried noodles with plenty of veg Ingredients (serves 2):  250g chicken breast, diced 1 tsp garlic granules 1 tsp paprika  30g egg white 30g cornflour Sticky Chilli Sauce 2 tbsp light soy sauce 1 tbsp dark soy sauce 20g honey 40g reduced sugar sweet chilli sauce 15g tomato ketchup 1-2 tsp sriracha sauce  2 tsp chopped garlic 2 tsp chopped ginger 1 tbsp rice vinegar ½ tsp chicken stock  1-2 tbsp water to loosen  Noodles 2 medium egg noodle nests  1 onion, sliced 100g sweetheart cabbage, finely shredded 150g beansprouts 1 tbsp reduced sugar sweet chilli sauce 1 tbsp light soy sauce 100ml noodle water reserved 3 spring onions, sliced To Finish 1 tsp sesame seeds Fresh red chilli, finely chopped (optional) 💞Whisk together all of the sauce ingredients in a bowl except the water until smooth. Set aside. 💞Cook the noodles according to packet instructions. Drain, reserving the noodle water.  💞Season the chicken with the garlic granules, paprika, salt and black pepper. Pour in the egg white and mix well. 💞Lift the chicken from the egg white mixture, allowing any excess to drip off, then lightly coat in the cornflour. 💞Air fry at 190°C for 10-12 minutes, shaking halfway through, until golden and crispy. Spray & cook an extra couple mins if you like it super crispy!  💞Fry the onion until soft.  💞Add the cabbage & bean sprouts and cook until slightly softened. 💞Add the cooked noodles. Pour around 1/3 of the prepped sauce over the noodles, followed by the extra sweet chilli sauce, light soy sauce and noodle water. Toss well.  💞Add the cooked chicken to a clean pan.  Pour over the remaining chilli sauce and toss until coated. If needed, add a small splash of water to loosen the sauce slightly while tossing. 💞Spoon the chilli chicken over the noodles. 💞Finish with sesame seeds, extra spring onions and sliced chilli if using.
