Season all sides with salt, pepper, garlic powder, onion powder, and smoked paprika. 4. Heat olive oil in a heavy skillet over medium-high heat. 5. Sear the steaks for 2–3 minutes per side until nicely browned. 6. Add butter, garlic, rosemary, and thyme to the pan. 7. Continuously spoon the melted herb butter over the steaks. 8. Transfer to a 400°F (200°C) oven and cook 5–8 minutes for medium-rare, or to your preferred doneness. 9. Remove the steaks and let them rest for 5–10 minutes. 10. Remove the toothpicks or twine before serving. 11. Drizzle with the remaining garlic herb butter. 12. Serve with mashed potatoes, roasted vegetables, or your favorite steak sides.
