A really fun way to catch them is by handlining with a blue crab and sight fishing in shallow water. Once you spot one, do your best to make a natural presentation, and the hogfish shouldn’t be able to resist the bait. Once you’re connected, try your best to keep them out of the rocks, where they can break you off.
