@blackthornsalt: Blackthorn – the heart of our name and our method. Most people know these thorns for its beautiful white blossom in early spring or the sloes that appear in autumn (sloe gin!). We appreciate it for its thorns. Those tangled, spiney branches create the vast surface area that makes our salt-making method possible, allowing wind and sun to naturally concentrate 26,000 litres of seawater into just 2,000 litres of rich brine ready for crystallising. With the frame of our Sister Tower complete, it was time for the least forgiving stage of the build- packing in the blackthorn bundles. It was painstaking (literally), physical work, hands covered in skelfs a-plenty, no glove tough enough. These thorns even pierce through most shoe soles given the chance! So with no little delight we finished the thorn packing just the other day. Relief… until the next section needs changing!
