For those that are curious about the first thing, it’s a traditional street food from my hometown Shanxi, China. It’s called Wan Tuo (碗托) and it’s made from buckwheat starch, once it’s cooled to a jelly like consistency we usually slice it in bite size pieces and eat with a spicy, tangy, garlic sauce

Technically most of these aren’t noodles. Normally noodles are made from wheat. These are what we call Fen, which made from different types of starch.
