Brings me straight back to my childhood 🥰 Recipe: 1 cup jasmine rice 7–8 cups chicken broth or water 2–3 chicken thighs 1 thumb ginger, sliced 2 garlic cloves Salt to taste Add chicken to a pot and poach. After poaching, remove and add rice. simmer partially covered for 1 hr, stirring occasionally, until creamy. Shred chicken back into the congee. Add more broth if needed. Top with marinated soft boiled egg, scallions, sesame oil, shiitake oil, white pepper, chili oil, crispy shallots! #congee #soup #cozycooking #breakfast #chinesefood

Is congee just very overcooked rice? I heard it described as a savoury porridge but it looks like the way my mother used to cook chicken rice soup until the rice burst and made little H shapes? If it is then I've avoided even trying congee but actually been eating it since I was a baby😲🤦🏻♀️😆
