Is congee just very overcooked rice? I heard it described as a savoury porridge but it looks like the way my mother used to cook chicken rice soup until the rice burst and made little H shapes? If it is then I've avoided even trying congee but actually been eating it since I was a baby😲🤦🏻♀️😆

By “storing in an ice cube tray” do you mean you chop in different ways and freeze? If so do you leave it uncovered to freeze or would that give them ice burn?
