Grass isn’t healthy for the earth, you should have a variety of plants like wildflowers for bees or butterflies to be able to use, grass is pretty much a desert that allows to aid to any wildlife

my issue is that I put down seed and it grows in great, then winter comes and then spring and it's all dead again, it doesn't come back

If you're overseeding your whole lawn, use a slit seeder. For seeding bare spots just rake and straw is fine.
