To use them at home just lightly toast the worms in a dry pan till golden and fragrant. Add them to your stock early—about 10g for every 4–5 quarts of broth. Simmer low and slow with beef bones, charred onions, ginger, and spices. Skim often. Strain clean. Once you’ve tried phở with sa giò, it’s hard to go back!
