Slow Cooker Garlic Mushroom Chicken with Buttered Green Beans Ingredients 1. Boneless Skinless Chicken Breasts – 4 pieces (about 2 lbs) 2. Fresh Mushrooms – 12 oz, sliced 3. Fresh Green Beans – 1 lb, trimmed 4. Yellow Onion – 1 medium, diced 5. Garlic – 6 cloves, minced 6. Unsalted Butter – 5 tbsp 7. Olive Oil – 2 tbsp 8. Chicken Broth – 1 cup 9. Heavy Cream – 1 cup 10. Cream Cheese – 4 oz, softened 11. Worcestershire Sauce – 1 tbsp 12. Dijon Mustard – 1 tbsp 13. Parmesan Cheese – 1/2 cup, grated 14. Paprika – 1 tsp 15. Garlic Powder – 1 tsp 16. Onion Powder – 1/2 tsp 17. Italian Seasoning – 1 tsp 18. Salt – 1 tsp 19. Black Pepper – 1/2 tsp 20. Fresh Thyme – 1 tsp 21. Fresh Parsley – 2 tbsp, chopped 22. Cornstarch – 1 tbsp 23. Cold Water – 2 tbsp Recipe 1. Pat the chicken breasts dry with paper towels. Season both sides with paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper. 2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 2–3 minutes per side until golden brown. They do not need to be fully cooked at this stage. 3. Transfer the seared chicken breasts into the slow cooker, arranging them in a single layer. 4. Melt 2 tablespoons of butter in the same skillet. Add the sliced mushrooms and diced onion, cooking for 5–6 minutes until softened and lightly browned. 5. Add the minced garlic and fresh thyme. Cook for another minute until fragrant, then transfer the mushroom mixture into the slow cooker around the chicken. 6. Pour the chicken broth and Worcestershire sauce into the slow cooker. Add the Dijon mustard and gently stir the liquid around the chicken. 7. Cover and cook on LOW for 3–4 hours or HIGH for 2–3 hours, until the chicken reaches an internal temperature of 165°F (74°C). 8. While the chicken cooks, melt the remaining butter in a large skillet over medium heat. Add the trimmed green beans and season lightly with salt and black pepper. 9. Add 2 tablespoons of water, cover, and steam the green beans for 5–7 minutes until tender-crisp. Remove the lid and cook for another minute to evaporate excess liquid. 10. In a saucepan, combine heavy cream, softened cream cheese, and Parmesan cheese. Whisk over low heat until smooth and creamy. 11. Stir the creamy cheese mixture into the slow cooker juices. Mix gently until the mushroom sauce becomes rich and evenly combined. 12. If the sauce needs additional thickness, mix cornstarch with cold water and stir the slurry into the slow cooker. Cover and cook for another 10–15 minutes until thickened. 13. Return the green beans to the skillet with the remaining butter and toss until glossy and thoroughly coated. 14. Arrange the creamy mushroom chicken in a serving dish, spoon the garlic mushroom sauce generously over the top, and garnish with freshly chopped parsley. 15. Serve hot alongside the buttered green beans, mashed potatoes, or steamed rice, making sure every portion gets plenty of creamy garlic mushroom sauce.
