EP 1 : eating like a Ghanaian in 1970s. Operation Feed Yourself in many ways mirrored the Nkrumah agenda of 1960s, self sufficiency. However it also deferred in the implementation and focus — self sufficiency through food as its foundation ran by a military government — not civilian. Every part of the country was integrated into the agenda and all citizen were highly encourage to participate. Students would partake in their school backyard farms and some volunteered on sugar farms in the harvesting and processing of sugar cane into sugar. National service, a program for all university graduates to partake in a one year program that still runs today, was born in this very decade. While we still eat the same things the ingredients, their processing and procurement has changed and it is reflected in how food has evolved in Ghana in the last 50 years.  For this bofrot, I obviously could not purchase everything from ghana so I used it as a means to tell a story. I tried my best to keep the recipe simple, like my mother had explained to me, but the major component for me was the palm kernel oil. Now, with many Ghanaian dishes, things are made a little bit richer with the addition of things like eggs, milk powder or even margarine in some bofrot batters. And while some of these ingredients are processed in Ghana, the owners of these processing plants or the raw material are all not of Ghanaian origin. Frytol Wilmar, Nestle’s ideal milk, Nestle’s carnation tea creamer, Flora Food Group blueband are all of foreign origins. Operation feed yourself ended for many reasons, one that its a product of government, global economic trend, fuel prices, climate, and even its own citizens.
