for context, she's making meatballs and the "dairy" in question is grated Parmesan. I don't like her at all but it's not a bad item to sub for Parmesan in a MEATBALL recipe. it would give some umami and funk to the recipe that while not exact to parmesan would be in a similar vein? like ok yeah add some greens, lighten up those meatballs 🧆
