@komes_12: Sourdough Pizza Dough Ingredients: 150g active sourdough starter 450g water 625g bread flour (or 00 flour) 15g salt (or to taste) 40g brown sugar Instructions: 1. In a large bowl, mix the sourdough starter and water until combined. 2. Add the flour, salt, and brown sugar. Mix until a shaggy dough forms and no dry flour remains. 3. Cover and let rest for 30 minutes. 4. Do 3 sets of stretch and folds, spaced 30 minutes apart. 5. Cover and allow the dough to bulk ferment until doubled in size and airy. Timing will vary depending on room temperature. 6. Evenly divide the dough into individual pizza dough balls. 7. Place dough balls in lightly oiled containers, cover, and let rise again before stretching for pizza. (30 mins) 8. Flour bottom of dough ball and stretch gently without popping bubbles, top as desired and bake until golden and bubbly.
