Pat the salmon dry with paper towels. Season with salt and black pepper, then let it rest for 5 minutes. 2. Heat the vegetable oil in a pan over medium-low heat. Cook the salmon until both sides are golden and the natural oils are released. Remove from the pan. Once cool enough to handle, remove the skin and bones, then flake into large pieces. 3. In the same pan, scramble the eggs until just cooked. Remove and set aside. 4. Using the salmon oil remaining in the pan, sauté the onion, scallion whites, and minced garlic until fragrant. Add the cooked rice and stir-fry until the grains are separated and evenly heated. 5. Return the salmon and eggs to the pan. Toss gently to combine.
