The cold butter helps create a stable emulsion, giving the sauce its silky texture. If the pan gets too hot, remove it from the heat briefly while whisking. 8. Continue whisking until the sauce is smooth, silky, and glossy. Stop adding butter once the sauce is rich and balanced, with the acidity mellowed. It should be thick enough to coat the back of a spoon. 9. Taste and adjust the seasoning with salt, pepper, or a squeeze of lemon juice if needed. 10. Serve immediately. Beurre blanc pairs especially well with fish, scallops, shrimp, asparagus, and other vegetables. Enjoy! Note: Traditional beurre blanc doesn’t include heavy cream. I added a splash here because it helps stabilize the emulsion and makes the sauce less likely to break, especially for home cooks.
