Ingredients for the cake: 1 cup pitted Medjool dates 1 1/4 cups boiling water 2 ripe bananas 1/2 cup room temperature unsalted butter 1/3 cup brown sugar 1/3 cup granulated sugar 1/4 cup maple syrup 1 egg 1/2 cup whole milk 1 teaspoon vanilla extract 2 cups all purpose flour 2 teaspoons baking powder 1/2 teaspoon baking soda Ingredients for the toffee sauce: 1/4 cup unsalted butter 3/4 cup heavy whipping cream 1/2 cup brown sugar Place the pitted dates in a large bowl and pour the boiling water over them. Let sit for 10 minutes. After 10 minutes, transfer the softened dates and any remaining liquid to a blender with the bananas. Blend until smooth. Pour the date and banana mixture into a large bowl. Add the butter and mix until smooth. Stir in the granulated sugar, brown sugar, and maple syrup and mix again. Add the egg and vanilla extract and combine. Add the flour, baking powder, and baking soda. Mix until just combined. Pour in the milk and gently fold until smooth. Transfer the batter to the prepared 8x8 dish and bake for 55 minutes, or until set and a toothpick inserted in the center comes out clean. While the cake bakes, make the toffee sauce.
