Would you try this? 🤔Salmon Shakshouka with roasted red pepper & eggplant 👌 Ingredients: - 200g salmon cut into larger cubes (sea bream, or sea bass) - 1 1/2 tbsp chopped parsley - 7 peeled tomatoes (you can replace with canned, with 7 canned tomatoes) - 1 baked eggplant - 2 baked peppers - 4 eggs - 1 tbsp chopped mint (or coriander) - 4 cloves chopped garlic - 100 ml water - 6 tbsp olive oil Process: 1. Peel the tomatoes: cut them into an X at the end and put them in hot water for 1 minute. Remove them directly into cold water. This will make them easier to peel. 2. Finely chop the tomatoes with a knife (or grate them). Cut the peppers and eggplant into larger pieces. 3. Add the garlic while the oil is still cold and then cook a little, until golden. Add the tomatoes, stir, season with salt and pepper. Cook until the liquid evaporates and the tomatoes soften. 4. Add the peppers, eggplant and salmon. Pour in the water and cover. Cook for 1 minute. 5. Add the mint and parsley, then make a hole with a spoon and pour in the egg. Repeat for all the eggs. Season again with salt and pepper. 6. Cover again and cook for 3 minutes. Uncover and cook for another 6 minutes to let the steam escape. There should still be some juice left. Serve with bread! Enjoy! 🇷🇴👇 Ingrediente: - somon 200g taiat in cuburi mai mari (dorada, sau lup de mare)  - Pătrunjel tocat 1 1/2 lingură  - 7 Roșii decojite (puteți înlocui cu conservă, cu 7 roșii din conservă)  - Vânătă coaptă 1 buc - Ardei copți 2 buc. - Ouă 4 - 6  - Mentă tocata 1 lingură ( sau coriandru)  - 4 căței usturoi tocati - 100 ml apă  - Ulei de măsline 6 linguri  Proces:  1. Decojiti rosiile: taiati-le in X la capat si puneti-l in apa fierbinte pentru 1 minut. Scoateti-le direct in apa rece. Astfel se vor decoji mai usor. 2. Tocati marunt cu cutitul rosiile (sau dati-le pe razatoare. Taiati in bucati mai mari ardeii si vanata.  3. Puneti usturoiul cat inca este rece uleiul si gatiti apoi putin, cat sa fie auriu. Adaugati rosiile, amesecati, asezonati cu sare si piper. Gatiti pana cand se evapora lichidul si rosiile se inmoaie. 4. Puneti ardeii, vanata si somonul. Turnati apa si acoperiti. Gatiti pentru 1 minut.  5. Puneti menta si patrunjelul, apoi faceti gaura cu o lingura si turnati oul. Repetati pentru toate ouale. Asezoonati din nou cu sare si piper. 6. Acoperiti din nou si gatiti 3 minute. Descoperiti si mai gatiti inca 6 minute ca sa iasa aburul. Ar trebui insa totusi sa ramana putina zeama.
