One of my favorite Anti-Inflammatory Breakfasts! Full of a bunch of nutrients: protein, vitamins, minerals, antioxidants, fat, and fiber. And made up of anti-inflammatory ingredients that support gut health. I am not including calories and macros for this, as you can customize this recipe to fit your needs. But I will include the ingredient amounts I used. Ingredients: - 4 eggs - 1 sweet potato - 1 tbsp olive oil - 1/2 of a avocado - Salt & pepper to taste Recipe: - Poke the sweet potato a few times with a for, and then cook it in an air fryer at 375 degrees for 45 minutes - Then cook your eggs in 1/2 tbsp olive oil. Season with salt and pepper - Cut the sweet potato in half (I used 3/4 of it). Season with sat & pepper, and the remaining oil - Put the eggs and 1/2 avocado on top - Dig in, enjoy, and reap the gut healthy and anti-inflammatory benefits #ulcerativecolitis #antiinflammatorydiet #breakfastrecipes #guthealthrecipes
