Wait until you see the orange top get a decent size around. Also what variety of carrots did you plant? Are they skinny or a thicker variety? That will make a difference.

I wait most of the summer (Vermont). I check how thick the carrots are at the top and pull nothing less than an inch or so.

wait for it to "shoulder" you'll see the top part of the carrot come out of the ground. you won't have to dig to see it.
