recipe below ⬇️ Tart Base -1/2 batch brioche dough (see last video) Custard -1 cup sour cream or creme fraiche -1 egg -1/2 cup sugar White Wine Caramel Syrup -3/4 cup sugar -3 tbs water -1 tsp vanilla -1 cup white wine Fruit (I used plums, any stone fruit or reconstituted dry fruits will do) Assembly: 1. Preheat oven to 275F 2. Roll and shape brioche dough to fit desired pan and let double in size 3. Mix sour cream and egg in small bowl 4. Dimple brioche dough and pour custard mixture inside. Sprinkle sugar over top, do not mix 5. Optional: egg wash sides of brioche tart and sprinkle with sanding sugar 6. Bake at 275F for 35-45 minutes until custard is set 7. While custard cools, begin syrup and poached fruit 8. Combine sugar, water, and vanilla and cook over medium heat until caramel begins to turn amber 9. Add wine and boil until caramel is dissolved 10. Poach sliced fruit in syrup until just soft, then let cool 11. Slice cooled tart and pour syrup and poached fruit over the top 12. Enjoy!
