PEANUT MISO CHILLI CRISP UDON 🍜🥵 These noodles are inspired by one of my favourite recipe developers, Marion Grasby of Marion’s Kitchen, and they are a go-to in my house. I’ve made some of my own additions by using chilli crisp and miso, which lend SO MUCH FLAVOUR to the noodles, especially in the umami department 🤌 Here’s the recipe: 600g pre-cooked packaged udon noodles 1 tsp sesame oil 1 tbsp vegetable oil 2 whole star anise 5 green onions, thinly sliced, whites and greens separated 4 garlic cloves, minced 1 tbsp finely grated ginger 2 tbsp chili crisp oil 225g vegan ground meat (I like beyond meat) 1½ tbsp smooth peanut butter 1 tbsp soy sauce 1 tsp rice vinegar 1 cup veg/mushroom stock 1 tbsp cornstarch mixed with 1 tbsp water 1 tbsp miso 1 tbsp sesame oil Cook udon according to package instructions. Drain and toss the noodles with 1 tsp sesame oil to prevent the noodles from sticking together. Heat oil in a large skillet or wok. Add star anise and toast for 1 minute. Add white of green onion and fry for 2-3 minutes or until translucent. Add garlic, ginger and chilli crisp and fry for 1-2 minutes until fragrant. Add beyond meat and break it up with your spatula. Stir and cook until browned, about 5 minutes. Add peanut butter, soy sauce, vinegar and veg/mushroom stock. Stir and simmer for 2-3 minutes. Remove star anise, lower the heat and stir in cornstarch mixture and miso. Add udon, most of the greens of your green onion and sesame oil. Toss to coat the noodles and serve with an extra garnish of green onion. Enjoy! #udon #veganrecipes #chilicrisp #miso #plantbased
