Heart-Shaped Parmesan Potato Rings ❤️ Ingredients: • 550g (about 9 small) yellow potatoes • Neutral cooking oil • 4 tbsp cornstarch • 1/4 cup parmesan cheese • 1 tsp each salt, pepper & paprika • 1/2 tbsp parsley Directions: Peel the potatoes and place them in a pot of salted water, then boil until fork tender. Drain the potatoes and let them cool slightly before mashing, then add cornstarch, salt, pepper, paprika, Parmesan cheese, and parsley and mix until well combined. If the mixture feels too sticky, add a bit more cornstarch as needed. Scoop out small portions and roll into balls, then flatten each ball in the palm of your hand. Use a heart shaped cookie cutter to cut the outer shape, then use a smaller heart shaped cutter to remove the center, creating a heart shaped ring. Flash freeze the potato cutouts for 5 minutes to help them firm up and hold their shape during cooking. Heat oil to 350 degrees and fry the potatoes in small batches, making sure not to overcrowd the pan since this can cause them to stick together. If the oil is not hot enough, the potatoes may fall apart. Once golden and crispy, remove and drain, then immediately season with salt and Parmesan cheese. Serve warm with your favorite dipping sauce. *If the potatoes are too sticky, increase the cornstarch to keep them from breaking apart when frying.
