Preheat oven to 175°C / 350°F and prepare a loaf pan. 2. Rub sugar and lemon zest together until fragrant. 3. Whisk in eggs until light and fluffy. 4. Add cream, oil, vanilla, and lemon juice. 5. Fold in flour, baking powder, and salt. 6. Pour into the pan and bake for 50–60 minutes, or until a toothpick comes out clean. 7. Cool completely. Glaze Mix the powdered sugar with lemon juice until smooth and drizzle over the cooled cake. 💡 Tip: Wait until the cake is completely cold before adding the glaze.
