These bagels were AMAZING. The combination of the blueberries and the grape jam is one of my favorites! Here is the recipe: Blueberry Bagels Ingredients 1 cup+ 2 tbs warm water 1 tablespoon honey 1 packet active dry yeast 1/2 cup mashed blueberries 2 tablespoons vegetable oil 1/2 teaspoon salt 4 cups bread flour, scooped and leveled Additional: 3 cups water 3 tablespoons honey Cornmeal, for coating 1 egg, whisked Whipped Grape Cream Cheese Ingredients 8 oz cream cheese, softened 1/4 cup grape jam 3 tablespoons powdered sugar Instructions In a large bowl, combine the warm water and honey. Sprinkle in the yeast and let sit for 10 minutes until foamy. Stir in the mashed blueberries, vegetable oil, and salt. Add the bread flour and knead for about 10 minutes, or until a smooth, elastic dough forms. Cover and let rise for 1 hour, or until doubled in size. Divide the dough into 6 equal pieces, roll each into a ball, then poke a hole through the center and gently stretch to form bagels. Place on a parchment lined baking sheet and let rest for 30 minutes. Bring 3 cups of water and 3 tablespoons of honey to a boil. Boil each bagel for 30 seconds per side, then dip the bottoms in cornmeal and place back onto a baking sheet. Brush the tops with the whisked egg. Bake at 450 for 12 minutes, or until golden brown. Let cool for 20 minutes before serving. For the whipped grape cream cheese, combine the cream cheese, grape jam, and powdered sugar in a bowl. Mix until light, smooth, and fluffy. Serve spread over the cooled blueberry bagels.
