homemade biscoff cinnamon rolls🤎   easy recipe:   3/4 cup warm water(180g) 1/4 cup granulated sugar(50g) 1/4 cup melted butter(57g) 1 egg 1 egg yolk(room temp) 1/2 tsp salt(1.5g) 3 cups of flour(350g) 1 packet of yeast 1 tsp olive oil( to oil your bowl) -combine your water, sugar and yeast and let it sit for 5 minutes or until it begins to foam. then mix in your egg, butter and dry ingredients and knead until smooth & combined( it’s okay to add more flour if needed) let your dough sit for an hour covered in an oiled bowl.    filling: 2-3 tbsp biscoff butter 1/4 cup melted butter(60g) 1/2 cup brown sugar(100g) 1 tbsp cinnamon pinch of salt crushed biscoff cookies( i used like 4-5) -combine all of the ingredients and spread onto dough(except for the cookies) , after evenly spread place crushed cookies on top and roll & cut your dough) mascarpone frosting: 8 oz mascarpone cheese(225g)( cold ) 1/4 cup softened butter (60g) 2-3 tbsp biscoff butter 1-2 tbsp powdered sugar(add more or less depending on your preference!) pinch of salt  1 tbsp of milk ( for thinning)(optional)  1/2 tsp vanilla extract(2g) -combine your mascarpone & butter and mix until smooth, add in your biscoff & other ingredients and mix until combined(mine kind of separated  bc i warmed it up to help with mixing but it fixed itself after melting on the rolls) set aside( in the fridge or freezer) until it’s needed.    bottom layer(optional):  -i took whatever was left over from the filling and mixed with a bit of heavy cream!
