Dua chua is that side dish that's always paired with braised pork, fish, rice, and everything in between. Traditionally, our parents/ grandparents would sun dry the mustard greens first and then allow it to slowly ferment with salt and water but that method takes several days and a lot of patience! My method is the non traditional way.. it does not require sun drying and long fermentation. The result is still sour, crunchy and delicious! DUA CHUA - PICKLED MUSTARD GREENS note: my mixture is on the sweeter side so if you dont like that, then reduce the amount of sugar INGREDIENTS 2 bundles of mustard greens (large Gai chow) 4 cups water 2 cups sugar 2 cups vinegar 2 tsp salt INSTRUCTIONS 1. Cut mustard greens into 1 - 1.5 in pieces. Wash throughly and place into a large enough air tight container (note: mustard greens are very dirty so make sure you wash it several times) 2. In a mixing bowl, combine: water, sugar, vinegar and salt. Mix until sugar is dissolved and then pour this mixture over your mustard greens. Let this sit at room temp for 2 days then move into the fridge for at least 1 week before enjoying.
