📖 Steak School — Junior Semester EPISODE 12: Chuck Roast (French Onion Pot Roast Recipe) 🥩🔥 Cut: Chuck Roast courtesy of @Heritage Craft Butchers — taken from the shoulder of the cow.  One of the most versatile cuts on the entire animal, budget friendly, loaded with connective tissue, deep beefy flavor and built for low-and-slow cooking. This week’s lesson turns chuck roast into one of my family’s favorite comfort meals: FRENCH ONION POT ROAST 1️⃣ Dry Brine  • Binder + heavy salt @am. SALT  • Leave uncovered in the fridge overnight 2️⃣ Hard Sear • Heat Dutch oven with oil until ripping hot • Sear chuck roast on all sides • Remove and set aside 3️⃣ Caramelized Onions • 3 yellow onions + 3 red onions, thinly sliced • Add onions to Dutch oven with butter + fond • Don’t worry about crowding — they’ll cook down • ~30 min in: add garlic + salt • ~1 hour in: deeply golden, flavorful, and jammy 4️⃣ Deglaze + Build the Braise • Deglaze with Worcestershire sauce • Add red wine + a little flour to thicken • Stir in beef broth • You’ve now built a French-onion-style braising base 5️⃣ Low & Slow Braise • Return chuck roast to the pot • Season with cracked black pepper + garlic powder • Add bay leaves • Cover and cook at 300°F until 205 internal (Time varies depending on size of your roast, so focus more on temperature than time in the oven. This one took just over 3 hours) 6️⃣ Shred & Rebuild • Rest roast briefly • Shred into soft, stringy pieces • Fold beef back into the braising liquid 7️⃣ French Onion Finish • Lay sliced baguette over the beef • Cover heavily with freshly grated Swiss Gruyère • Broil ~5 minutes until bubbly and golden • Finish with fresh parsley 🔪 The Result: Ultra-tender shredded beef, caramelized onions throughout, melty Gruyère, softened baguette, and insane depth of flavor — French onion soup meets pot roast. 🎂 Last week was my mom’s birthday. This week we celebrated my mother-in-law (a huge French onion soup fan) and this one was a hit. 🐶 Quality control unfortunately had to sit this one out due to the garlic risk, but that didn’t stop him from hanging around the kitchen all day!
