I think its a different shrimp paste. if this is indonesian rujak, get terasi (which you can find on amazon or weee, it'll come in like a bouillon cube form but will rehydrate).

I think you should add more sugar so the taste will be balance, sweet and spicy. And rujak is more sweet than sour so if you add tamarind just add it a little bit. Also dont use garlic and shrimp paste.

you're buying the wrong shrimp paste but technically it still could be used in the sauce.. it will taste more like Thai style or viet style although try it just a tiny bit first.. Indonesian shrimp paste is more dry, looks like a brick sometimes like butter, before used toasted it first and try a little bit to see if you like it or not, and try asking it from Indonesian restaurant where to buy it.. Asian market not always has it, but search ABC brands, it has orange packaging and theres a picture of a shrimp..

The shrimp paste is basically for the umami boost. Maybe you can try putting just a tiny amount of it in separate container then compare the taste. If you still don’t like it, it’s okay
