Grease two 9-inch cake pans and line the bottoms with parchment paper. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set the mixture aside. In a large bowl, beat the butter until smooth. Gradually add the sugar and continue beating for about 4 minutes, or until the mixture becomes light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Add one-third of the dry ingredients to the butter mixture and mix until just combined. Beat for several minutes until the frosting becomes smooth and fluffy. If it is too thick, add a little more milk. If it is too thin, add more powdered sugar. Place one cake layer on a serving plate. Spread a generous layer of frosting over the top. Add the second layer and frost the top and sides of the cake. Use a spatula to smooth the frosting or create decorative swirls. For extra flavor, you can add fresh strawberries between the layers, mix sprinkles into the batter, or top the finished cake with fruit, chocolate shavings, or crushed cookies. Let the cake sit for about 30 minutes before slicing. This helps the frosting set and makes cleaner slices. The finished cake serves 10–12 people and can be stored in an airtight container for up to 4 days.
