BUTTERMILK FRIED APPLES Golden, crisp, nostalgic, and perfectly indulgent 🥹 Recipe below OR go to my website through the link in my bio 🤎 #Recipe Details (makes 18-24 fried apples): Crème Anglaise: - 3/4 (180ml) cup heavy cream - 3/4 cup (180ml) milk of choice, I recommend whole milk - 1 vanilla bean, beans removed (or 1 tsp vanilla bean paste or extract extract) - 4 egg yolks @Vital Farms  - 1/3 cup (70g) granulated sugar Easy Homemade Salted Caramel: - 1/4 cup (85g) maple syrup - 3 tbsp (55g) smooth, creamy almond butter - 2 tbsp (25g) avocado oil or melted coconut oil - Large pinch of salt Buttermilk Fried Apples: - 1 cup (120g) all-purpose flour - 1 tbsp (12g) granulated sugar - 2 tsp (4g) baking powder - 1/2 (3g) tsp salt - 1 tsp (2g) cinnamon - Optional: 1/2 tsp (1g) apple pie spice - 3/4 (180ml) cup buttermilk, at room temperature [substitution: 3/4 cup (180ml) milk of choice whisked with 1 tbsp (15ml) apple cider vinegar or lemon juice] - 1/2 cup (120g) Greek yogurt - 1 egg, at room temperature - 1 tsp (4g) vanilla bean paste or extract - 2 tbsp  (28g) salted butter, melted & slightly cooled - 3 large apples of choice, peeled (I recommend Granny Smith) - 2 tbsp (16g) all-purpose flour, for tossing the apple slices - Avocado oil, for frying @Chosen Foods  Cinnamon Sugar Coating: - 1/2 cup (110g) granulated sugar - 1 1/2 tsp (3g) cinnamon Instructions: Start by preparing the crème anglaise ahead of time. In a medium saucepan or pot over medium heat, add the heavy cream and milk. Add the vanilla bean seeds, mix, and bring to a slight simmer. While that is heating up, in a separate medium bowl, add the egg yolks and sugar. Whisk until well combined and lighter in color. Once the milk mixture is simmering, as you continuously whisk, slowly stream it into the egg mixture to temper the eggs, until combined. Then. add the mixture back to the pot, and bring back to medium heat. Stir continuously, until slightly thickened. It should coat the back of a spoon or spatula. Strain the mixture into a bowl and set aside until ready to serve. Prepare the salted caramel. Mix together the maple syrup, almond butter, avocado or coconut oil, and a large pinch of salt in a medium bowl, until well combined and smooth. Prepare the buttermilk batter. In a medium bowl, whisk together the 1 cup (120g) of flour, sugar, baking powder, salt, cinnamon and apple pie spice. Set aside. In a separate large bowl, whisk together the buttermilk, Greek yogurt, egg and vanilla until well combined. Then as you continuously whisk, stream in the melted butter until fully incorporated. Add the dry ingredients to the wet; whisk until well just combined.  Fill a large, heavy-bottomed pot or Dutch oven with avocado oil, filling ~2” in the pan. Heat on medium-high until it reaches 350F-370F. Line a wire cooling rack with a thick layer of paper towels. Prepare the cinnamon sugar by mixing together the sugar and cinnamon in a medium bowl. Slice the apples into large slices, getting about 6-8 slices from each apple, depending on how large you want them. Add the apple slices to a large bowl and sprinkle with the 2 tbsp (16g) of flour. Toss to coat the apples in the flour. This will help the batter stick to the apple slices. Working in batches, drench the apples slices into the batter and slightly shake off any excess. Drop them directly into the hot oil and fry each side for 1-2 minutes (2-4 minutes total), until deep golden brown. Once finished, use a slotted spoon to carefully remove the apples from the oil and transfer to the rack with paper towels. Repeat with the remaining apple slices and batter. While the other apples are frying, dip the warm fried apples into the cinnamon sugar mixture, making sure to roll and coat both sides. Then place onto a cooling rack or piece of parchment paper.
