1. Beef Pilau
 
 *Ingredients:*
 - 500g beef, cut into chunks
 - 3 cups basmati rice, washed and soaked 30 min
 - 4 cups beef stock or water
 - 2 large onions, sliced thin
 - 3 tbsp oil or ghee
 - 2 tbsp pilau masala or mix of: 1 tsp cumin, 1 tsp cardamom, 1 tsp cloves, 1 tsp black pepper, 1 tsp cinnamon
 - 2 cloves garlic, minced
 - 1 inch ginger, grated

 - Salt to taste
 - 1 tbsp fried onions/crispy shallots for topping

 *Steps:*
 1. *Cook the beef*: Boil beef with salt till tender. Save the stock.
 2. *Fry onions*: Heat oil in a heavy pot. Fry onions till golden brown and crispy. Remove half for garnish.
 3. *Add spices*: Add garlic, ginger, pilau masala. Stir 1 min till fragrant.
 4. *Add meat & tomatoes*: Add beef and tomatoes. Cook 5 min till tomatoes break down.
 5. *Add rice*: Drain rice and add to the pot. Stir gently to coat with spices and oil.
 6. *Simmer*: Pour in 4 cups hot beef stock. Bring to boil, reduce heat, cover tightly. Cook 15-18 min on low till rice is done and fluffy.
 7. *Garnish*: Top with crispy fried onions and coriander before serving.
 
 2. Kachumbari - Tomato Onion Salad
 
 *Ingredients:*
 - 2 tomatoes, diced
 - 1 red onion, diced
 - 1/4 cup fresh coriander, chopped
 - Juice of 1/2 lemon
 - Salt to taste
 
 *Steps:*
 Mix everything together and let it sit 10 min. This goes around the edge of the plate.
 
 3. Chili Garnish
 
 *Ingredients:*
 - 2-3 red and green chilies, sliced
 - Optional: 1 tbsp lemon juice and pinch of salt
 
 *Steps:*
 Toss sliced chilies with lemon and salt. Pile on the side for heat.
