Raspberry Cheesecake Brownies: Recipe⬇️ Ingredients: Brownie Layer: 1 cup white sugar ½ cup plain flour ½ cup cocoa powder ¼ teaspoon baking powder Pinch of salt 115g butter, melted & cooled  1 teaspoon vanilla extract 2 eggs Raspberry Filling: 115g frozen raspberries (about 1½ cups) 2 tablespoons white sugar or caster sugar 1 tablespoon cornflour 2 tablespoons lemon juice Cheesecake Layer: 250g cream cheese, softened ⅓ cup caster sugar 1 teaspoon vanilla extract 1 egg Method: 1. Preheat oven to 170°C fan forced. Line a 9x9 inch baking tray with baking paper. 2. Make the brownie layer by whisking together the sugar, flour, cocoa powder, baking powder and salt. 3. Add the melted butter, vanilla and eggs, then whisk until combined. Spread the brownie batter evenly into the lined tray and set aside. 4. Make the raspberry filling by adding the frozen raspberries, sugar, cornflour and lemon juice into a microwave-safe bowl. Mix together, then microwave in 30-second intervals, stirring between each, until it becomes thick and jammy with no sugar crystals or visible cornflour remaining. This should take a couple of minutes. 5. Make the cheesecake layer by mixing the cream cheese, caster sugar, vanilla and egg until smooth, creamy and lump-free. 6. Spread the cheesecake mixture over the brownie batter. Dollop the raspberry filling over the top, then use a knife to gently swirl the raspberry through the cheesecake layer. 7. Bake for 40 -45 minutes. The centre will still have a slight jiggle when removed from the oven. 8. Allow to cool completely on the bench, then refrigerate for a couple of hours before slicing.
