butter chicken ✨- this recipe is a keeper. It’s a flavor packed recipe that I find myself making on repeat mainly because the combo of perfectly cooked chicken coated in rich, spice infused sauce is irresistibly delicious!! It is also a great recipe for meal prep - a double win in my book!  what you’ll need: For the chicken marinade: • 1 1/2 pounds boneless chicken thighs or breasts cut into bite-sized pieces • ½ cup plain yogurt • 2 large garlic cloves, minced  • 1 tbsp fresh ginger, minced  • 1 tsp garam masala • 1 tsp turmeric • 1 tsp ground cumin • 1 tsp kashmiri (red) chili powder • salt to taste  For the butter sauce: • 2 tbsp butter or ghee  • 1 tbsp oil • 1 large onion, chopped • 2 large garlic cloves, minced • 1 tbsp fresh ginger, minced • 14.5 oz can crushed tomatoes • 1 tsp ground cumin • 1 tsp garam masala • 1 tsp ground coriander • 1 tsp kashmiri (red) chili powder • 1-2 tsp sugar • salt or to taste • 1/4-1/2 cup water or chicken broth  • 3/4 cup heavy cream • Fresh cilantro, finely chopped  here’s how to make it:  Chicken Marinade - In a bowl, mix together the yogurt, garlic, ginger, spices and salt before mixing in the chicken. Cover and refrigerate for 30-60 min or overnight. Butter Chicken Sauce - Heat oil in a large pan over med-high heat. Add chicken pieces in batches and cook for 3-4 min per side until lightly browned. Set aside. In the same pan, melt the butter, add the onions and sauté until soft, 3-4 min. Add in the garlic and ginger. Cook until fragrant, 1-2 min. Mix in all of the spices and pour in the crushed tomatoes. Stir to combine and simmer for 6-8 min. Transfer sauce to a blender and blend with 1/4 to 1/2 cup of water until smooth. Pour sauce back into the pan. Stir in the cream, sugar and season with salt to taste. Add in the chicken with juices and cook under medium heat, stirring occasionally, until chicken is cooked through and the sauce has thickened, 10-15 min.
