Because your starter is a live culture, a tiny amount can be fed, grown and scaled up into as much starter as you need for baking. That’s why I don’t keep huge jars of starter sitting on my counter. I had a starter that seemed ready, was doubling every day in a row and smelled sweet and passed the float test. Randomly, it lost all bubbles, isn’t moving at all, still smells sweet but it isn’t showing any good signs really! What happened and how can I fix it?

My starter is almost a month old and does not “grow” and doesn’t smell?? There are tiny bubbles but no activity. Feeding wheat and bread flour just not sure what is happening. In Seattle area. May be the temp of my environment so I bought a sourdough warmer to see if that works.
