Yes, the P-51 was the original inspiration for the name of the car. However, Ford management decided against the airplane inspiration because the public associated the term Mustang with the horse not the aircraft, so they pivoted to the Mustang horse. This is why the logo is a running horse and why smaller V8s were considered Pony cars. To say "nothing to do with the horse" is a stretch.
