One of them being this peanut crusted lion’s mane sandwich which is a perfect way to opt for a gluten free breading option all while adding that distinct peanut flavor and adding a host of nutrients like 7g plant protein, and nearly 30 minerals and vitamins that all can contribute to feeling and eating better. INGREDIENTS 1 large lions mane mushroom Wet batter 1/4 cup tbs ground flax seed
2/3 cup water
1 tbs mustard
 1/4 cup hot sauce
 Dry batter
 1 1/2 cup ground peanuts
 1 tsp Salt
 1 tsp Pepper
 1 tsp Garlic Powder
 1 tsp Onion Powder
 1 tsp Dried Thyme 1 tsp Cayenne Pepper  1 tsp Smoked Paprika Herby Mayo 1/3 cup vegan mayo 2 tsp dried dill 1 pinch of salt and pepper 1 tsp garlic powder Squeeze of half a lemon Pickled onion Arugula Sriracha INSTRUCTIONS Sear the lion’s mane in a hot skillet and press it down to release the water content until you reach your desired thickness for the sandwich. Season with salt and pepper lightly. For wet batter add flax seeds, water, hot sauce and mustard. Mix and set aside. For dry batter, add flour and spices, mix and set aside. Dredge the mushroom in each batter. Fry on medium heat until golden and crispy all around. Let cool on a paper towel lined plate, assemble sandwich with all combined mayo ingredients, add toppings, serve and enjoy! #ItsNotNutsItsPeanuts #UnexpectedPotential #USAPeanuts #wholefoodplantbased
