This post makes several scientific claims but doesn’t provide any peer-reviewed sources to support them. Beta-glucans do interact with immune cells such as macrophages, neutrophils, and dendritic cells through receptors like Dectin-1, but that does not mean eating fermented mushrooms automatically produces a stronger immune response. The claim that fermentation makes beta-glucans “three times more available” is a very specific number that requires evidence, and I haven’t seen research supporting it as a general rule for mushrooms. Likewise, the statement that cooking destroys beta-glucans is misleading. Beta-glucans are relatively heat-stable polysaccharides and are still present in cooked mushrooms. In fact, cooking can help break down mushroom cell walls and improve digestibility. Fermentation can be a useful food-processing method, but presenting it as the “most important step” while claiming cooking destroys the key compounds is not supported by the current evidence. Beta-glucans are structurally resilient, heat-stable polysaccharides—not delicate vitamins or enzymes. In the scientific community, thermal processing (such as boiling, baking, or roasting) is actually the standard method used to break down the rigid, indigestible chitin cell walls of mushrooms to extract and release soluble beta-glucans (Abdullah et al., 2017; Kiss et al., 2021). While heavy boiling can cause some water-soluble compounds to leach out into the cooking water (Yao et al., 2023), thermal treatments often increase beta-glucan solubility and enhance their prebiotic efficacy rather than destroying them (Hwang et al., 2020; Kiss et al., 2021).
