Make a Strawberry ShortCake with Me! 🍓🍰 (For my boyfriend’s mum to celebrate her Birthday ☺️🩷🎉) Ingredients: • 200g margarine •200g caster sugar • 200g self-raising flour • 4 eggs • 1tsp baking powder • 2tbsp milk • 500g strawberries • 600ml double cream • 200g cream cheese • 1tsp vanilla extract • 2tbsp powdered sugar • 2tbsp granulated sugar Instructions: 1) Preheat the oven to 160°C fan, and line two 8 inch cake tins with parchment paper 2) Prep the strawberries by cutting into halves longways, ensure you have enough to fit the diameter of the baking tin. Then the left over ones can be chopped into tiny pieces and covered in granulated sugar for later :) 3) Mix your margarine and caster sugar together. Crack in your eggs one at a time, stirring inbetween 4) Fold in your flour and baking powder, then add the milk 5) Divide equally between your cake tins and bake in the oven for 15 minutes, cool completely on a rack 6) Half whip the double cream, then add the cream cheese, vanilla, and powdered sugar. Whisk until stiff peaks, then transfer into a piping bag 7) Assemble the cake, wrap a cake collar around the base of a cake layer. Place the halved strawberries, facing outwards, around the cake 8) Pipe the cream inbetween the strawberries and then fill the inside right up to the height of the strawberries. Add the chopped strawberries and then top with the remaining cream.
