Finished with a bright lemon syrup and a thick lemon glaze, it’s the kind of cake that disappears after the first slice. Ingredients * 200g (1 cup) sugar * Zest of 3 lemons * 3 large eggs * 120g (½ cup) oil * 180g (¾ cup) full-fat Greek yogurt * 30g (2 tbsp) lemon juice * 5g (1 tsp) vanilla extract * 190g (1½ cups + 1 tbsp) all-purpose flour * 4g (1 tsp) baking powder * 5g (1 tsp) baking soda * 4g (¾ tsp) salt Lemon Syrup * 30g (2 tbsp) lemon juice * 20g (1½ tbsp) sugar Lemon Glaze * 180g (1½ cups) icing sugar * 22–25g (1½ tbsp) lemon juice * 8g (2 tsp) cream or milk Method Rub the lemon zest into the sugar until fragrant. Add the eggs and whisk until smooth, then mix in the oil, Greek yogurt, lemon juice and vanilla. Add the flour, baking powder, baking soda and salt, folding gently until just combined. Pour the batter into a lined loaf pan and create a line down the center using a spatula or butter knife. Bake at 170°C (340°F) for 50–60 minutes, or until a skewer inserted into the center comes out clean. While the cake is still warm, brush over the lemon syrup and allow it to soak in completely. Let the loaf cool fully before topping with the glaze. Mix the glaze ingredients until thick and smooth, then pour over the cooled loaf and leave to set before slicing. 🍋 Moist, soft, perfectly lemony and finished with a bakery-style glaze.
