People usually use marinated, grated beets, the liquid in which the beets are is usually sweet and sour because of the vinegar base. Since you used fresh, baked beets, I think what it was lacking overall was just some acid, like lemon juice. I always use fresh beets too, because then I can regulate with the lemon how acidic I want them to be. Easier to regulate the sweetness as well, marinated beets usually tend to be very sugary (personally). Otherwise, very nice job, glad you like the dish 🫶🏻
