Pulling my brisket at a lower internal temp (195 instead of 203) and doing a long hot hold was the biggest game changer for me. Nice tips!

Facts! I made mine 24 Hr style, for my own wedding (first time). I was scared as heck!! Timed everything, rest, fridge, warmed prior to serving Boom! Every freaked out!.
