Heat a generous splash of olive oil in a pan over medium heat. Add the onion and shallot with a pinch of salt and cook for 6–8 minutes until soft, lightly golden and sweet. 2. Add the jalapeño, garlic and guindilla peppers and cook for another 2 minutes until fragrant. 3. Add the smoked paprika, mustard powder, chilli flakes and black pepper. Stir for 30 seconds to toast the spices and wake everything up. 4. Stir through the pickles, brown sugar, apple cider vinegar and water, then let it simmer until glossy, sticky and rich. 5. Remove from the heat and stir through the seeded mustard, Dijon, Worcestershire sauce and pickle brine and the butter.  6. Cook your sausages until they’ve got a little colour but aren’t fully cooked through yet  7. Stretch out roughly 180g of pizza dough into flat hot dog bun shapes  8. Place cheese in the middle, the sausage on top and cook in the oven until the dough is fluffy and charred.  9. Finish with the sauces, relish and chives  #pizza #hotdog #pizzadog #sausage #relish
