@heresyourbite: Crispy Salami Antipasto Pasta Salad 🫒 This is my spin on the classic antipasto pasta salad, and it has all the elements of a perfect bite: something salty, something briny, something fresh, something creamy, and a little heat. Crispy salami, Castelvetrano olives, marinated artichokes, pepperoncini, mozzarella pearls, fresh basil, and plenty of parmesan get tossed together with colorful radiatori and a Calabrian chili parmesan vinaigrette. For the calabrian chili vinaigrette: 1/3 cup extra virgin olive oil 2 tbsp red wine vinegar 1 tbsp pepperoncini brine 1 tsp Dijon mustard (for binding) 1 tsp mayo (optional; for binding) 1 large garlic clove, grated 1–2 tsp Calabrian chili paste 3/4 tsp dried oregano 1/4 cup freshly grated Parmesan 1/2 tsp kosher salt, plus more to taste Freshly cracked black pepper For the pasta salad: 12 oz multicolor radiatori pasta 8 oz salami or sopressata, sliced 1 (12 oz) jar marinated artichoke hearts, drained and roughly chopped 3/4 cup Castelvetrano olives, chopped 1/2 cup pepperoncini, chopped 1 pint cherry tomatoes, halved 8 oz mozzarella pearls 1/2 cup finely grated Parmesan, plus more for serving 1/4 cup fresh basil, torn Freshly cracked black pepper, for serving #pastasalad #antipasto #salami #summerrecipes #EasyRecipes
