@theactualansley: Banana Split Greek Yogurt Bowls Life is simply too short to not be making your yogurt bowls into banana splits. I genuinely cannot stop making these for breakfasts and lunch and they truly make me feel like I am having breakfast at a fancy resort. Recipe below, enjoy💕 Ingredients: 3/4 cup Greek Yogurt (I use plain) 1 banana, split lengthways Drizzle of honey 3 tablespoons blueberry compote *recipe for compote below* Handful of granola (I love @Purely Elizabeth) Sprinkle of chopped pistachios 3 fresh cherries or additional fruit of choice Instructions: Place the banana halves in a shallow bowl or banana split dish. Scoop three - 1/4 cup mounds of Greek Yogurt between and on top of the banana halves. Drizzle with honey. Spoon blueberry compote over the yogurt. Sprinkle with pistachios, granola, and top with cherries. Enjoy!! For the Blueberry Compote: Ingredients: 1 1/2 cups (236g) blueberries, fresh or frozen 3 tablespoons (38g) granulated sugar Squeeze of lemon juice Zest of 1 lemon 2 tablespoons water Splash of pure vanilla extract Pinch of fine sea salt 1 tablespoon cornstarch 1 tablespoon cold water Instructions: Combine everything but the cornstarch and 1 extra tablespoon of water in a saucepan over medium heat. Simmer for 5-8 minutes, stirring every now and then until most of the berries burst. I like to lightly mash some of the berries and leave others whole. Whisk together the cornstarch and 1 tablespoon of water then add to the berries and cook on low heat for about 1-2 minutes until the mixture thickens slightly.
