I've seen videos where some people remove the flowers so the plant can produce more or bigger potatoes. I've done this with one bag and left the rest too see what difference the yield and size are. I'll be waiting till the foliage dies back.

wait until flowering has finished and they start dying off. only lift what you will use on any given day. they will keep better in the ground.
