Preheat your oven to 350 degrees Fahrenheit. In a medium bowl add the butter and chocolate chips and melt until smooth. Whisk in the sugar. Mix in eggs one at a time. Add in cocoa powder, flour, and salt. Fold together until smooth. Chill in the fridge. For the cookie dough, in a medium bowl cream the butter and brown and white  sugars. Add vanilla and egg yolk. Mix in the cookie butter. Mix in flour, baking soda, salt, and cinnamon. Fold in the white chocolate chips. Add alternating scoops of the brownie batter and biscoff cookie dough to an 8x8 greased and parchment lined square pan. Break the biscoff cookies in half and stick the pieces into the surface of the brookies. Bake for about 30-35 mins or until the brownie is baked through and the cookie is golden brown. If the top of the brookies are getting too toasty in color and the brookies still need more time, cover with tin foil and continue baking until ready.
