the reason roblox models export with disconnected vertices is because that's how Sharp edges are converted! So when you merge them it looks all funky because it used to be a sharp. 🥲 Roblox triangulates the models as well

My biggest tip with merge by distance is opening the popup that shows up in the lower left corner of your viewport window, and turning the distance space down to its lowest! That will only merge vertices that are already together, but not connected! That should minimize your vectors altering ontop of your mesh! You can also open edit mode, and select “mesh” in your tool bar next to your mode select (Make sure you have ALL of your mesh selected!) Go to the normals drop down and “Reset Vectors”! That should reset the lighting, happy blender-ing guys! ✨

As for the vertices not being connected I believe it has to do something with the exporting, I wouldn't know how the Roblox studio works, merging in the center is the only way I can think of fixing that. question is if the mesh comes broken from just exporting.
As for the lightning I believe it has to do something with normals, considering it's being exported from Roblox it probably would have it's way of calculating normals, by editing it like removing vertices by merging it in the middle it can mess up it's already pre calculated normals from Roblox, you can also fix that pretty easily by going into edit mode, clicking ALT + N which opens up the recalculate normals menu and then recalculate normals from outside.
It doesn't matter if you want to use normals in VRC, If you do it matters. I often go without them

that shading is very fixable after merging, select all vertices (pressing A should do this easily), press ALT + N to bring up your normals menu, then hit recalculate outside, this should fix this
