Right hear me out for this weeks meal prep….I know I have done a lot of Nandos related recently but the reason why is that a lot of them call for using all the sauces & mayos which aren’t exactly cheap…so I am trying to give you lots of ideas to use them up as I know I am guilty of buying stuff like this & then letting it fester in the back of the cupboard or fridge. So here we have Nandos chicken & halloumi risotto. Lets just ignore the fact there is no halloumi on it on the first shot, I forgot about it 🙃 To make 4 portions you will need: 4 small chicken breast Salt & pepper 4 tsp smoked paprika  1 tsp cayenne pepper 2 tsp oregano 1 tsp garlic powder 400g dried risotto 1 red pepper diced 1 yellow pepper diced 1 red onion diced 3 garlic cloves minced 2 tbsp tomato puree 1 @knorruk chicken stock pot 4 tbsp @nandosuk sauce 1 litre water @nandosuk peri peri mayo @nandosuk chilli jam Coat the chicken in 2 tsp paprika, 1tsp cayenne, 1 tsp oregano, plenty of salt & pepper & 1 tsp garlic powder. Drizzle with some oil & then fry off in a pan on medium heat for 15 mins until cooked through Remove the chicken from the pan then to the same pan add the peppers, onion, garlic, 2 tsp smoked paprika, 1 tsp oregano & some salt & pepper Fry off on a medium heat for a few mins then add the tomato puree, stock pot, nandos sauce, risotto & water Stir through then leave to simmer on a low heat for around half an hour until all the water has absorbed & the risotto is cooked through. Add a little bit more water if needed. Fry off half a block of halloumi whilst the rice is cooking.
