nutella brioche bread 🥐🤎    recipe :   tangzhong : 5 tbsp milk (75 g)   2 tbsp flour (16 g)   2 tbsp water(30g) in a saucepan, whisk the milk, water and flour together over medium-low heat until it thickens into a smooth paste, about 2–3 minutes. it should look like pudding. remove from heat and let it cool while you start your dough.   dough  : ½ cup warm milk (120 g)   ¼ cup warm water (60 g)   3 tbsp sugar (38 g)   3 tsp yeast (9-10g)   3 cups flour (375 g)   1 tsp salt (6 g)   3 tbsp melted butter (43 g)   1 room temp egg (50 g)   & the tangzhong   & nutella ( measure with your heart ) in a large bowl, mix the warm milk, warm water, sugar, and yeast. let it sit for 5–10 minutes until foamy. this step helps activate your yeast, so don’t skip the warm milk!   once frothy, add the tangzhong, melted butter, egg& mix until combined, then add the salt, and flour. mix until a shaggy dough forms. transfer to a lightly oiled surface and knead until smooth and elastic, about 8–10 minutes. instead of adding extra flour, use a little oil on your hands and surface(it keeps the dough super soft).   place the dough in an oiled bowl, cover with plastic wrap and a towel, and set it in a warm spot for about 1 hour or until doubled in size.     once risen, punch it down and divide the dough into 8 equal portions. take one portion at a time and flatten it into a circle. spread nutella on one half of the circle, leaving a small border around the edge so it doesn’t leak. fold the dough over the nutella so it becomes a half-moon shape. on the clean side (the part you didn’t spread nutella on), cut thin strips all the way across. gently crisscross the strips over each other to make that woven pattern, then pinch the seams so the pieces stay intact. i gave them a C shape, kind of like a croissant. repeat with the rest of the dough. (when crossing them over try to not pull the strips too thin or they might rip during the second rise)( it also took me awhile to figure the twists out😭) place them on a lined baking sheet, cover, and let them proof for another 20–30 minutes while you preheat your oven to 350•F.  brush buns with egg wash.    bake for 20-30 minutes ( they should be golden brown once finished )    ib: archersfood  #nutella #brioche #bread #Recipe #fyp
