high acidity means you are either not cooking your sauce long enough or low quality passata. This is why many italian families make and bottle their own passata. Adding sugar or carrot is just a hack.

I find it so odd... Tomatoes are a little tart, a little acidic, a little sweet. That's what they are. Would you squeeze lemon over fish and think "that's a little acidic, let me add sugar" 😭

Guys the chef is right of course, sugar has nothing to do with acidity, an old grandma trick to soften a very acidic tomato sauce is to add a bit of baking soda which is a base and actually lowers the pH, however the best way to make a good tomato sauce is to simply cook it gently for a long time, the longer the better, it will mellow on its own. Just add salt and your favorite herbs and spices.

Both sugar and bicarbonate of soda can fix an acidic tomato sauce, but they work completely differently:
Sugar hides the acid: It doesn't actually lower the acidity; it just balances the flavor profile so the sauce tastes smoother and less sharp. Use a tiny pinch so it doesn't turn into ketchup.
Baking soda destroys the acid: Because it's alkaline, a tiny pinch chemically neutralizes the acid (it will bubble a bit!). This is perfect for harsh canned tomatoes or if you suffer from acid reflux.

it completely depends on which tomatoes you're using. with Mutti I've never needed to add sugar. but budget tin tomatoes, you do need sugar because they are too acidic.
