Ingredients * 1½ lbs large shrimp, peeled and deveined (tails on or off) * 2 tbsp olive oil * 3 cloves garlic, minced * 1 tbsp lemon juice * 1 tsp paprika * ½ tsp smoked paprika * ½ tsp onion powder * ½ tsp salt * ¼ tsp black pepper * 1 zucchini, cut into thick slices * 1 red bell pepper, cut into chunks * 1 yellow bell pepper, cut into chunks * 1 small red onion, cut into chunks * Lemon wedges for serving * Fresh parsley, chopped (optional) Instructions 1. If using wooden skewers, soak them in water for 30 minutes. 2. In a large bowl, combine olive oil, garlic, lemon juice, paprika, smoked paprika, onion powder, salt, and pepper. 3. Add the shrimp and toss to coat. Let marinate for 15–20 minutes. 4. Thread the shrimp, zucchini, peppers, and onion onto skewers, alternating ingredients for color and flavor. 5. Preheat your grill to medium-high heat. 6. Grill the kebabs for 2–3 minutes per side, until the shrimp are pink and opaque and the vegetables are lightly charred. 7. Remove from the grill and squeeze fresh lemon juice over the top. 8. Garnish with parsley if desired and serve immediately. Oven Method * Bake at 425°F for 8–10 minutes, turning once halfway through.
